Have a sweet tooth?  Well I do, and this post is especially yummy.  Last Sunday I was treated to a delicious taste of baby sweetness when we photographed six month old Bryton at the Columbus Botanical Gardens.  I have never met a more pleasant baby, and this one smiled and patty-caked non-stop despite the insane heat and humidity.  Bryton was accompanied by his grandmother, who owns the Curves Salons in Columbus and is herself a budding photographer.

And speaking of all that sugar, read on, below, for an interview with Fran Papenfuss, or “The Cake Lady,” as so many of us know her.  Fran has baked some of the best wedding cakes I have tasted, and if you ever attend a wedding show, you must look her up.  She can be found at the booth with the most  people lined up because her tables are piled high with boxes of delicious cakes to sample.  Take a look at the interview, and you’ll be surprised at the most unusual wedding cake she has ever created, and what “fillings ” some economy-minded brides are requesting.

An Interview with Fran Papenfuss

JWP:  What is the most unusual cake design that you have ever created and is there a story behind it? 

TCL: Probably the most unusual cake would be a grooms cake. It was a casket. The grooms family owns a casket service company and he works for the family business. It turned out good but very different from the usual.

JWP:  How should I begin to choose a wedding cake?  Is the design or the flavor the most important factor to consider first?

TCL: I think the design and the flavor are both important in choosing a wedding cake. To begin it is always good for the bride to look in magazines, on websites or other resources to have some idea of what she would like her cake to look like. I highly recommend a cake tasting to discuss flavor options.

JWP:  Are accessories like pillars, toppers, and stands included in the price or are those things extra? 

TCL: I do not include the price of the pillars since I do not use the disposable kind. I ask my brides to return them. This way I do not have to charge them for the pillars. If the cake is delivered out of town, I do charge for the pillars since the bride is not local to return them. I ask my brides to provide their cake toppers unless they tell me what they want and I add the price to their total. The cake stands are not an additional fee. These must be returned by the following weekend. If out of town, I ask them to please return via mail.

JWP:  Are designs and types of cakes revolving in and out of vogue like wedding dresses?  If so, what are the most fashionable couples requesting right now?

TCL: I don’t think that cakes are in and out as much as they were at one time. The most popular design seems to be the scroll and dots alternating on the tiers. The different flavors for each tier is another big request now as well. It gives the guests different options at the wedding.

JWP:  How are cakes priced – by the complexity of the design or by the slice?

TCL: I price my cakes be the number of servings, detail design and whether it is delivered locally or out of town. 

JWP:  How far in advance should I order my cake and is a deposit required?

TCL: It is  best to book cakes as soon as possible after starting to plan your wedding. I actually book cakes up to a year in advance. Even though we do more than 1 cake per weekend, we do get booked. A  non-refundable deposit is required to secure the date and time.

JWP:  Are there any ways that a princess bride on a Cinderella budget can stretch her cake dollars and still manage impress her guests?

TCL: Some brides have ask about having artificial layers in their cake so they can have a bigger cake for appearance purposes, and use sheet cakes. My thinking on that is why pay for fake layers when you can’t eat them, just have the batter that is used to make the sheet cakes used to make the tiers for the cake. One way for brides not to go way over their budget is to set a realistic goal for the cakes and talk with the cake baker about this budget and see what can be done.
